Burg Pyrmont was probably built toward the end of the 12th century on a rocky spur above the Elzbach in the Eifel, and has been documented since 1225. Its founder was Kuno von Schönberg; his son was the first to call himself Lord of Pyrmont. In the late Middle Ages, divisions of the inheritance led to disputes within the family, until the castle passed by marriage to the Lords of Eltz. In 1652 an Eltz heiress sold her share to the Waldbott von Bassenheim family.

From 1712 the Waldbotts had the fortress converted into a Baroque residential palace: the palas (main hall building) was raised to three stories and given large windows. During the French Revolution the owners fled; in 1810 the complex was auctioned off for demolition and fell into ruin over the following decades.

In 1963 the Düsseldorf architects Helmut Hentrich and Hubert Petschnigg acquired the ruin and had it stabilized and partly rebuilt, merging old walls and modern additions into a single ensemble. From 1990 the castle grounds were open to visitors; on display were furnished rooms such as the Baroque Room and the Knights' Hall with historic furniture and weapons. Its landmark is the round keep, about 24.5 meters tall, along with the kitchen building, chapel and a deep draw well.

Today the castle is used mainly as a hotel and as a wedding and event venue. According to the official website, it cannot be visited in 2026 until further notice; a virtual tour is available via Google Street View.
