About the museum
The Irsee monastery brewery in the Allgäu draws on the brewing tradition of the High Middle Ages. Its monastery beers are still left untreated and unfiltered today. They are brewed in traditional fermentation vats, fermented slowly and cool for up to 14 days, and then matured in the historic vaulted cellar. Brewing uses Bavarian barley and wheat malt and aroma hops from the Hallertau, boiled in a copper brew kettle.
The brewery museum displays old brewing equipment alongside modern beer production. From there you have a direct view into the brewhouse. A tour starts in the museum, continues to the fermentation vats and goes down into the cool vaulted cellar. On request, it ends with a tasting of the monastery beers in the historic brewhouse gallery.
