About the museum
The Centro de Interpretación de la Manzanilla, known as CIMA, occupies Las Covachas, a colonnaded gallery from the late 15th century devoted to trade, on the Cuesta de Belén in Sanlúcar de Barrameda, next to the municipal market and the Palacio Ducal. Las Covachas were declared a historic-artistic monument in 1978, together with the residence of the Dukes of Medina Sidonia.
The town council handed the space to the Fundación Manzanilla–Sanlúcar de Barrameda, which brings together the main wineries and producers of manzanilla, to turn it into an interpretation centre. The rehabilitation was financed by the Diputación de Cádiz with an investment of around €250,000, and the centre opened in June 2021. It later received ERDF funding for its modernisation.
The route is divided into five thematic areas: the landscapes of manzanilla, between the river, the ocean, the albariza soil and the marshland; the wine and its biological ageing under a veil of flor; the trades of manzanilla, from the vine grower to the cooper and the cellar worker; the architecture of the Sanlúcar wineries; and the wine of joy, with its links to festivities and food pairing.
