About the museum
The Museo del Salame di Felino is part of the network of the Musei del Cibo of the Province of Parma. It is housed in an old 14th-century rural courtyard in the centre of Felino, originally made up of a square tower house and a smaller farm building. For centuries the building housed the village inn, documented from the 17th century, and later a pharmacy and a shop. At the end of the 18th century the two parts were joined into a single complex; the 1985 restoration revealed the stone walls, today a rare example of an early medieval building without plaster in the foothill belt.
The route is divided into seven sections: the historical and archaeological evidence of the link between the territory and pig farming, with the consortium protecting the IGP designation and an interactive screen on Italian salami traditions; the large pork-butchery hall with tools of the norcini and peasant families; the illustrations by Benito Jacovitti devoted to salami; the history of the meat grinder, including through Karl Drais, inventor of the draisine; gastronomy and production technology; a seventeenth-century farmhouse; and video testimonies of norcini and modern producers who keep to the original recipe.
