About the museum
The Museo del Balsamico Tradizionale is housed in the Villa Comunale Fabriani in Spilamberto and is run by the Consorteria, a non-profit cultural association active in Spilamberto since 1967 to promote and protect balsamic vinegar. The Consorteria looks after and ages the vinegar in its own barrels.
The visit is a journey through scents, stories and traditions: historical evidence, characteristic aromas and short videos combine with spoken narration on the history and production of Aceto Balsamico Tradizionale di Modena DOP. Diplomas, signs and medals are also displayed in the rooms.
Climbing to the attic of the villa leads to the Acetaia Sociale, which holds 129 barrels in 22 sets (batterie) and 7 mother barrels; the temperature variations in the attic favour fermentation in summer and rest in winter. For members, a laboratory checks the sugar content (Brix) and total acidity. The guided route includes a tasting, while the bookshop sells products aged for at least 12 and 25 years.
