About the museum
The Chillón family has been making sheep's cheese since the late 19th century, and today four generations of cheesemakers keep the tradition going. The museum was set up inside their dairy on the outskirts of Toro to explain how cheesemaking has changed and how it was done in rural homes in the past.
The route follows the three main stages of the product, from milk to curd and cured cheese, and runs in parallel with the history of the Chillón family. The rooms show containers and objects related to milk, a large collection of moulds used over more than a century (from esparto-grass cinchos to today's micro-perforated moulds), and audiovisuals about a working day in earlier times.
The visit ends with a tasting of raw-milk sheep's cheeses and D.O. Toro wine in the tasting room, where the house products can also be bought.
