About the museum
The Museo del Prosciutto di Parma is part of the network of the Musei del Cibo of the Province of Parma and is located in Langhirano, the heart of the production area. It is housed in the former Foro Boario, a restored early 20th-century rural building, built when the Parma torrent was channelled and the area was reorganised with the slaughterhouse, the livestock market and a bridge to Lesignano. The Foro Boario project was never completed: for financial reasons only half of the planned courtyard was built, and until 2002 the building housed the municipal warehouses.
The route is divided into eight sections. It starts with the land and the long tradition of pig farming in the Parma area, supported by oak woods, then moves on to the pig breeds, to salt with local brine wells and a collection of salts from around the world, and to the art of pork butchery, with historical documents and antique tools of the norcini. The following sections illustrate the other typical cured meats of the Parma area, gastronomy and the stages of production, with videos and a reconstruction of a curing plant, and the work of the Consorzio del Prosciutto di Parma.
The visit ends with a paid tasting in the museum’s Prosciutteria and with the shop selling typical products.
