About the museum
Guijuelo is the heart of the area with the largest production of Iberian hams and cured meats in the world, and the municipal museum explains how the pasture and acorns of the dehesas are transformed into one of the most prized foods for centuries. Over the last half century, the curing trade has gone from being mainly family-run to becoming part of industry, although products from acorn-fed Iberian pigs still depend on a rustic breed, an extensive agro-livestock and forestry system and largely artisanal production.
The museum combines the old and the new, the rural and the urban. It uses an audiovisual language close to contemporary art and displays its images among antique machines, tools and holm oak trunks. It is organised into four thematic areas.
The visit is led by a guide who is an expert on pigs, dehesas and the curing industry. It includes fourteen high-definition video projections on the industry, the dehesa and traditional life, interactive games, samples of plant products from the dehesa and of cured meats to touch and smell, and a collection of antique curing tools and machinery.
