About the museum

The museum occupies the former social dairy of Persone, built in the early 20th century with a contribution from the Austrian province; members contributed materials and labour in proportion to the livestock they owned. Each member brought milk every day and had the “right of turn” (diritto di turno), that is, the chance to process it into cheese and butter in proportion to the milk contributed.

The dairy was mainly used in winter and spring, when the cows stayed in the village stables. The milk was weighed and recorded on arrival and left to cool outdoors, probably thanks to the cool microclimate of the locality. The cheeses were then aged at the home of the member who had produced them.

The structure served members until 1998, when it was bought by the municipality, restored and maintained with its original tools. Today it is part of the Ecomuseo della Valvestino and displays on the ground floor the equipment for processing milk.
